This recipe comes from Jessica Mitton's, a local Certified Holistic Nutritional Consultant™ and Culinary Nutrition Expert. )new cookbook "Some Good". The book features healthy adaptations to local delicacies. I picked up my copy at Costco.
On a summer evening there are few "sides" I enjoy more than fresh local greens. This brightly coloured dressing delivers for visual appeal and taste.
Partridge-berry Salad dressing
Directions:
Place all ingredients in a blender and blend until the mixture is a smooth, pureed consistency.
Personal notes:
Variation: The first time I made this dressing, I used frozen partridge-berries. The next time I used thawed frozen cranberries. It was equally delicious with cranberries, not quite so pretty. I also used a full tablespoon of honey.
Serve with fresh local mixed greens, sliced green onions, chopped walnuts and tart apples sliced thinly for a quick and delicious summer evening salad. Please remember to drizzle fresh lemon over the apple to prevent discoloration.
